Tucked on the outskirts of Waikiki, on Ena Road between condominiums and nearby hotels, Chiba-Ken is a happy medium for locals and visitors. Owner Koji Okada hails from Chiba, a prefecture surrounded by Tokyo Bay and the Pacific Ocean, so the menu 1) is sushi-centric and 2) includes dishes named after Chiba's biggest cities. The sake menu changes by the season, but you can expect generous pours into tall glasses set inside cedar-wood masu, or square cups, the overflow from the glass creating a happy second serving of your favorite sake. If fresh sushi and sashimi don't sate your appetite, supplement them with a few skewers of grilled chicken, crispy fried curry croquettes or goya champuru, Okinawa's famous stir-fry of bitter melon, eggs, tofu and meat. You'll find seating at the bar or at tables inside or outside, separated from passerby traffic by lava rock walls.
